King Prawn Linguine

This is one for the carb lovers. What could be simpler than a delicious king prawn linguine. Perfect for when you don’t want to spend hours in the kitchen but you still want a delicious dinner. Full of gorgeous, spicy chilli flavour and perfect with an ice cold glass of white wine.

Serves 2

Ingredients

150g linguine

200g raw king prawns

1 tablespoon butter (2 if you want to make it extra delicious)

1 tablespoon butter (to swirl through linguine)

1-2 teaspoons dried chilli flakes ( according to taste)

50ml white wine

salt and cracked black pepper to season

2 tablespoons olive oil

3 cloves garlic – minced

Juice of a lemon

Fresh parmesan cheese to serve.

Lemon wedges to serve

Method

Cook your linguine according to your instruction times in a large pan of boiling salted water. Cook til al dente but about 5 minutes before your pasta is cooked heat your olive oil in a separate large pan add your king prawns, chilli flakes, white wine, lemon juice, minced garlic, salt and black pepper. Keep stirring the pan and also give the linguine a little stir now and then.

Once the prawns are cooked through the linguine should be done. Drain the linguine and immediately swirl through a tablespoon of butter and add to the pan of king prawns and the rest of the ingredients. Add another tablespoon or 2 of butter. I mean 2 tablespoons is going to make it extra delicious but I usually add 1 so it’s less calorific, but hey this dinner isn’t about cutting calories so you may as well go for it.

If you like it hot add a fresh sliced red chilli.

It’s as simple as that.

Tip: I love this served with a grating of good parmesan cheese but like all Italian fish dishes and cheese it will be up to you! I like to add some at the end of cooking time too. About a cupful should do the trick.
