This recipe is from Mary Berry’s “Quick Cooking” and it’s absolutely wonderful. I love to bake cakes for family and friends to let them know how much I care and that I am thinking of them. I often gift cakes made from my recipes but just as much I love to sift through my cookery books and choose something special that I know they will enjoy and this one is always well received.
Ingredients
225g baking spread plus extra for greasing
225g caster sugar
225g self raising flour
1 teaspoon baking powder
4 large eggs – beaten
2 eating apples – peeled, cored and grated
Icing sugar for dusting
Filling
150ml double cream
3 tablespoons lemon curd
Method
Pre heat oven to 180C / 160C fan.
Grease and line 2 (8 inch) cake tins
Start by adding all the ingredients except the apple and icing sugar to a large mixing bowl and whisking together until nicely combined.
Now add the grated apple and mix in.
Divide the mixture between your 2 tins.
Bake in the centre of the oven for approximately 25 – 30 minutes. They will look springy and golden when they are ready to come out. While your cakes are baking whip your cream so it forms peaks add your lemon curd and swirl it all together.
Remove cakes from oven and after a few minutes transfer to a wire rack to cool.
Once they are cool spread with the cream and lemon curd mixture.
Sift over a little icing sugar.
Gift to whoever is in need.
