

I don’t know about you, but I like lots of sauce to dip in when I have chicken skewers. When Orriss & Son, a small batch sauce provider kindly sent me these beautiful sauces, I knew the perfect recipe to devise.
These chicken skewers are full of flavour and pair so well with their piri piri sauce. It’s such a versatile sauce, that can be used at the dinner table or during cooking. It really does elevate your dish. We love them with fluffy white rice, a little green salad and lots of fresh coriander and fresh lemon to serve.
Serves 2
Ingredients
2 chicken breasts (and 4 skewers, pre soak if wooden)
For the marinade
2 cloves garlic
1 teaspoon oregano
1 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
1 teaspoon paprika
1 teaspoon tomato purée
1/4 teaspoon ground ginger
1 teaspoon honey
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
Orriss and Son piri piri sauce for dipping once cooked
Fluffy white rice, green salad, fresh coriander and lemon to serve.
Method
Add all of your ingredients for the marinade to a large mixing bowl and stir thoroughly to combine. I like to do this with a fork.
Chop your chicken into cubes and add it to your mixing bowl of delicious marinade, making sure you coat all of the chicken. If you have time marinate overnight. Don’t worry if not as they will still be delicious.
Place all of your chicken cubes onto your four skewers and then onto a lined baking sheet.
Grill for approximately 20 minutes (or until the chicken pieces are fully cooked through).
Serve with your dipping sauce, rice, salad, coriander and fresh lemon to squeeze over.
