Apple Ice Cream

Who fancies some fruity apple ice cream? Ice cream’s not just for Summer. This is wonderful with apple crumble, fruit pies, heaped onto pancakes or just scooped out and eaten on it’s own.

It’s so fresh and full of an explosion of apple flavour and best of all as easy as anything to make. Once you make your own you’ll wonder why you never did before, I promise!


2 large Bramley apples

350ml double cream

1 tablespoon lemon juice

50g light brown sugar

1 teaspoon vanilla extract

Green food colouring to make it look extra apple flavoured. ( I used 2 of the tiny lids of colouring)


Preheat oven to 170C / 150C fan

Peel and dice your apples, then transfer them to a baking dish and sprinkle over your lemon juice and 50g light brown sugar.

Bake in the oven (covered with foil) for approximately 25 minutes.

Meanwhile, measure all the other ingredients into a large mixing bowl.

Once your apples are baked allow them to cool.

Tip your apples into your awaiting cream mixture, stir and blend with a hand blender. Pour into a freezer proof dish and cover with cling film. I use a loaf tin.

Freeze overnight. Remove from freezer 10 minutes or so before serving, you don’t want to be crowbarring it out the container.
