Everyone loves a blondie! These are so delightful and smell like a dream while they’re cooking. They fill the house with a warm, dreamy vanilla aroma that is heavenly.
Wonderful with vanilla ice cream and lots of extra strawberries.
Ingredients
150g strawberries – hulled
1.5 tablespoons water
50g granulated sugar
175g unsalted butter plus extra to grease the tin
275g light soft brown sugar
2 large eggs – beaten
1 teaspoon vanilla extract
200g plain flour
1 teaspoon baking powder
100g white choc chips
Method
Pre heat oven to 180C / 160C fan
Start by greasing and lining a tin. I use a 30cm x 20cm tin which is 4cm deep.
Chop your strawberries into pieces after you have hulled them and put into a pan with 1.5 tablespoons water. Bring to the boil and simmer for approximately 10 minutes so the strawberries start to look all jammy.
Melt the butter in a separate pan and whisk in your brown sugar. Leave to cool for 10 minutes or so.
Now whisk in your beaten eggs and vanilla into the butter mixture and gently stir in the flour and baking powder.
Finally add your choc chips and stir to combine.
Swirl in your strawberries and spread into your baking tin.
Bake on the middle shelf for approximately 35-40 minutes.
Remove from oven and allow to cool before transferring to a wire rack.
Enjoy with a lovely glass of fizz!
