It’s so easy to make a crumble, you really would be hard pressed to go wrong. Once you’ve made it I promise you’ll be converted. It’s so quick and simple.
There’s nothing like the gently spiced fruit and crunchy topping to give you that warm, cosy feeling.
Ingredients
450g victoria plums
Large handful of fresh raspberries
Tablespoon caster sugar – sprinkle over fruit
Teaspoon cinnamon
Tablespoon butter
Topping
225g plain flour
110g butter
75g brown sugar
Handful of chopped pistachios
Method
Preheat oven to 190C / 170C fan
Start by cutting the plums in half and removing the stones. Cut into chunks.
Put the plums in a pan with the raspberries, caster sugar, cinnammon and a tablespoon of butter. Simmer for a minute or two until soft and then transfer to your baking dish. I use a 26cm x 16cm dish.
In a large mixing bowl add your butter, flour and brown sugar and rub together to form a crumbly mixture.
Sprinkle the crumble mixture over your fruit making sure all the fruit is fully covered. Add chopped pistachios and bake in the centre of the oven for approximately 35 minutes until it turns a lovely golden colour.
Serve with custard, cream or ice cream for the perfect Autumn / Winter comfort food.
