I think everyone would agree that cupcakes make the day a better one! Decorate as you wish but I like them covered in buttercream with a strawberry on top. Irresistible!
Makes 12
Ingredients
170g butter
170g caster sugar
170g self raising flour
3 eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
For the buttercream
85g butter
250g icing sugar
1 teaspoon vanilla extract
A few drops of ice cold water to mix
Method
Preheat oven to 185C / 165C fan
Line a large muffin tin with cases
This recipe couldn’t be easier. You just add all your ingredients (except for the buttercream) to your mixing bowl, blend up with your whisk or if you’re energetic with a wooden spoon.
Spoon into your cake cases and bake on the middle shelf of your oven for approx 15 minutes. Once the cakes look lightly golden and springy they’re ready to come out of the oven.
Cool on a wire rack and start mixing up your ingredients for your buttercream. If you need to you can add a tiny amount of cold water to your buttercream mix. Once you’ve got a creamy consistency, transfer to your piping bag and pipe onto your cupcakes. I love doing this, it makes me come over all 1950’s housewife!
