
We love coconut and mango in our family so I thought I’d experiment with a sweet, sticky marinade that also has a hint of spice. This is perfect for a mid-week family dinner. You could sandwich it into a brioche bun, have with some chunky homemade chips and salad or just like we did with some rice, stir fried broccoli and courgette with chilli and garlic.
If you love mango and coconut you are going to love this.
Serves 4
Ingredients
4 chicken breasts
1 ripe mango – diced
2 tablespoons desiccated coconut
1 teaspoon chilli flakes
grind of salt and black pepper
3 tablespoons honey
1 teaspoon fresh grated ginger
Tablespoon olive oil
Method
In a large mixing bowl add all your ingredients (except the chicken) and blend into a smooth paste.
Slice your chicken into large goujon style pieces.
Dip the chicken into the marinade, making sure it’s all fully coated.
Heat a pan with your olive oil and add your chicken pieces, turning frequently until fully cooked through.
It’s as simple as that!
Perfect mid week meal, full of flavour that’s quick and simple to make.
Tip: I like to serve with some fluffy white rice along with the vegetables. If you’re team coriander a handful of fresh coriander really takes this to another level.
