Coconut Jam Puffs

I made these for Neil as he loves them. I trekked around everywhere looking for shredded coconut, supermarkets, online, health food shops, you name it and I couldn’t get any anywhere!

I didn’t think they would turn out all that good with desiccated coconut but they have exceeded my expectations. A bite to try one turned into devouring the whole thing. They’re gorgeous. Not sure Neil’s too keen though, he only scoffed 5 of the 7!

Ingredients

(for the puffs)

1 pack ready roll puff pastry

4 – 5 tablespoons strawberry jam ( could use any flavour you fancy)

Sprinkle of flour for the work surface.

(for the topping)

60g icing sugar

approx 4 teaspoons cold water

6-7 tablespoons desiccated coconut or shredded if you can get hold of it.

Method

Preheat oven to 200C / 180C fan

Roll out your puff pastry on a floury work surface with a rolling pin.

Score out 14 squares and put 7 of them on a lined baking tray as these are going to be the bases of the puffs. Lightly spread jam over them.

Put the remaining squares onto each base and squish together a little.

Bake in the centre of the oven for approx 20 mins.

Remove from oven and cool completely.

Mix together your icing sugar with a few drops of icy water to form a paste and spread on the tops of your puffs. Quickly shake over the coconut while the icing sugar is still sticky.

Quickly eat one before everyone else does and you don’t get a look in!
