Turkish Delight Rocky Road

I always think there’s something quite retro about rocky road and it reminds me of my first time visiting America as a kid maybe that’s why I love it so much.

I’ve been conjuring up lots of different combinations but hands down this is the most delightful recipe and the Turkish Delight gives it something special from the usual Rocky Road. I have to make this when lots of people come over as I can’t trust myself around it!

Ingredients

  • 200g dark chocolate
  • 75g marshmallows
  • 1 bar of Turkish Delight
  • 80g golden syrup
  • 200g rich tea biscuits
  • 135g butter
  • Sprinkle of icing sugar to serve (optional)

Method

Line an 18cm x18cm tin with greaseproof paper.

Put the biscuits in a freezer bag and bash into little pieces with a rolling pin. Then chop up the marshmallows if they are not miniature and also the Turkish Delight. I did this with scissors as its easier.

Melt the butter, chocolate and golden syrup in a pan over a low heat, stirring all the time. Allow to cool slightly then fold in all the ingredients.

Spoon into the tin and refrigerate for a few hours or ideally overnight.

Gently ease out of the tin and cut into whatever size you wish to eat. It’s as easy as that but I’d say this makes about 12 generous pieces but you can chop it into whatever size you fancy. Heap onto a plate and sprinkle over a little icing sugar and watch them disappear!
