Chicken, Avocado and Pepper Tacos

Whenever we have tacos for dinner my girls love it. So much so that my Mia put down her phone and helped me make them and she did a fine job! They’re such a great weekend dinner. If you want to get your teens involved in cooking this is such a great recipe to start with.

Does anyone else tilt their head to the side when they eat a taco or is it just me?!! There’s not really an elegant way to eat them but hey!

These chicken, pepper and avocado tacos are delicious and not too spicy as no chilli is involved. You can top with a sauce, cheese, loads of crunchy green salad or just have them like I do with a squeeze of lime and a beer.

Serves 4

Ingredients

4 chicken breasts ( this will be plenty for a family of 4)

8 tacos

1 teaspoon smoked paprika

1 teaspoon garlic granules

1 teaspoon cajun spice

1/2 teaspoon oregano

Salt and pepper to season

2 glugs of olive oil

approx 1 cup of rice and some salad to serve (optional)

Method

If serving with rice, weigh this out, rinse and drain until the water runs completely clear in a sieve. I usually cook approx 1 cup of rice for 4 if serving in tacos and once rinsed well I add almost 2 cups of water but not quite and a vegetable stock cube for a bit of flavour). Put on a low heat and cover. This should take approx 20 mins but keep an eye.

While the rice is cooking mix your spices and seasoning together in a large mixing bowl.

Chop your red pepper into strips. If you don’t have red pepper any colour will do but these are sweeter which I think is nice for this recipe.

Chop your chicken into strips, rub with olive oil and coat well with the spice and seasoning mix. I put them in the bowl and give them a good mix with my hands. I’m sure you know the drill with raw chicken and washing your hands so I don’t need to go into that.

Heat your olive oil on a low heat in a large frying pan and pan fry your pepper strips until almost cooked and then set aside. Chop your avocado into chunks.

Pan fry your chicken with the other glug of olive oil and once cooked throw your peppers back in.

Once the rice is almost done pre heat your oven to 120C / 100C and put your tacos in the oven standing on a baking tray for 1 minute only, remove from oven and load up with your rice, chicken, peppers and avocado a squeeze of lime and anything else you fancy.
