I’ve been experimenting with frozen cocktails during lockdown and they don’t disappoint. Don’t judge me but this is simply a smashed up lemon ice lolly with a measure of Sicilian Lemon Gin, Martini Bianco, lemon juice and lots of ice. It looks a bit nuclear but don’t knock it til you’ve tried it!
Ingredients
Makes 1 cocktail
1 cup of crushed ice
1 measure of Sicilian Lemon Gin
1 measure of Martini Bianco
1 lemon ice lolly
1/2 a lemon – the juice of and a slice to garnish
Dash of lemonade optional
Method
Start by adding your crushed ice to a large mixing bowl along with the lemon ice lolly and smashing up a little and removing the stick. Squeeze in your lemon juice and add a dash or two of lemonade. You can now pop in the blender.
Once you’ve got a slushy consistency pour into your cocktail glass, pour your measures of gin and martini through the ice and swizzle about to mix through and garnish with a slice of lemon.
